Curator 2013 Marananga Cabernet Sauvignon – Museum Release

A museum release from our very first vintage of Curator solely off our Marananga Cabernet Sauvignon block in 2013.

Hand-picked and de-stemmed into open-top tank for fermentation, chilled down
for a two to three day cold soak then allowing to warm up and naturally ferment using indigenous wild yeasts. The ferment was gently hand plunged two to three times daily for approximately seven to ten days. Then basket pressed and filled directly to 100% new French oak with two to three weeks barrel fermentation (with natural malolactic fermentation) followed by 24 months maturation in these same barrels. The wine was racked only once during this 24 months and then bottled unfined and unfiltered.

Only a small amount is available of this remarkable wine that really is only now starting to come into its own.
