Curator Single Barrel Shiraz
The Curator 2016 Single Barrel Shiraz is our most limited release wine. Each year winemaker we mature our wines in new French oak barrels sourced from the best forests. Across this range there are differences in how the wine and the oak characters come together, resulting in barrels with different flavour profiles. After 12 months, we select the finest barrel which is kept separately until bottling. This single barrel, when bottled, becomes the Black Label Shiraz, with less than 400 bottles made annually.
94 points – James Halliday 2020 Wine Companion – Cold soak 2-3 days then warm up with wild yeast fermentation that lasts approximately 7-10 days then basket-pressed/filled to new French oak for another 2-3 weeks (other wines 5-6 weeks fermentation with mlf), racked only once in the next 2 years and bottled unfined and unfiltered. This particular single barrel was selected in Dec ’16 and treated separately, racked once and bottled direct from barrel. It is a massive wine, with massive oak and tannins. Drink by 2036
