The Montepulciano had extremely minimal skin contact and was immediately destemmed and pressed to tank, where natural/wild ferment occurred as the juice warmed. Fermented to complete dryness, then settled, racked and bottled in quick succession.
The Grenache (about 10% of the blend) was handpicked earlier than the “Monte” and pressed into seasoned French Oak barrels, where it underwent natural fermentation, to create a creamy texture and enhance the beautiful mid palate of the finished blend.
Both wines were fermented to complete dryness, with the Grenache spending 3 months in barrel prior to be blended together with the Montepulciano prior to cold stablisiation and bottling.

Both are hand harvested, at differing times, from a grower’s vineyard in Hamlet of Halletts Valley, just South of the Village of Tanunda

Generally for immediate drinking but this wine looks amazing with a year in the cellar. It brings out a whole new array of flavours!
